For ever I have always bought the packaged pancake mix. Until I ran out one morning, so I went to the Food Network and got the recipe for pancakes courtesy of Mike Cuzzacrea. After making them from scratch I'll never buy pancake mix again. This way I know what I am serving my boys. I also put blueberries on them or what ever they want. Even my wife loves this recipe and thinks It's so simple. Here it is, and if you make enough ahead of time put it in an airtight container for the next time.
1egg
1 cup of all-purpose flower
3/4 cup of milk
1 tablespoons of sugar
2 tablespoons of vegetable oil
1 tablespoons of baking powder
1/2 teaspoon of salt
In a small bowl, mix all the ingredients, breaking up the lumps, power batter onto hot griddle. Flip pancakes when the edges appear cooked and the batter bubbles on top. Serve immediately.
Note: You can, before you flip the pancake put blueberries. chocolate chips or what ever you like on them.The kids can help make there own personal pancakes.
